Jenkins et al 1998, Ludwig 2002). Butyrate, a product of RS fermentation in the colon can
prevent the development of cancerous cell in the colon (Jenkins et al 1998, Ferguson and
Harris 2000). Furthermore, the amount of RS that reaches the colon is larger than that of
other dietary fibers, thus it is more important as a substrate for colonic fermentation
(Cummings and Englyst 1987).
