Stilbenes, particularly trans-resveratrol, are related to the plant
protection mechanisms, and are synthesized under stress conditions
(Mencarelli et al., 2010). Table 3 shows that the CSV30, CSV40
and MV40 wines had a significantly higher content of transresveratrol
than the control wines. This can be explained by the
results observed for grape musts (Panceri et al., 2013), where the
effect of the concentration and the biotic and abiotic stresses
generated by the dehydration process increases the trans-resveratrol
content of the grape musts. The tyrosol content of wine samples
is the result of the secondary metabolism of yeast, and the
highest levels were observed in the CSV0, CSV40 and MV0 wines
samples.
