Finney (1983) has reviewed and analysed the e†ects of germination on vitamin contents of numerous cereals and legumes. According to his provided data, we can summarise the e†ects of soya bean germination on vitamin contents of the seeds. A short period (2È6 days) of germination of soya bean enhances ascorbic acid, riboÑavin, niacin, biotin and pyridoxine contents; however, pantothenic acid and thiamin content remains unchanged. Few articles were reviewed which directly related the e†ects of germination of soya beans to their vitamin A activity; however, the e†ects of germination on seed carotene content have been studied.
