By fitting linear regression lines to weigh losses vs time, results showed an average losses of0.08%, 0.11% and 0.66% per day at 5, 10 and 20◦C, respectively. Weigh losses of fresh commodities is the consequence of respiration and oxidative reactions mainly sugars. However, degradation is correlated to many factors such as the ripening stage, temperatures, storage duration, gas composition, and even the microbial charge of the stored commodities (Harvey, 1978; Paull,1999). The results showing the high weight losses corroborate the high decrease of saccharides noticed at 20◦C, and the low decrease observed at 5 and 10◦C.
