It is also well documented that diet-derived antioxidants have a significant impact on
human health. Lowering the prevalence of some forms of cancer has been demonstrated to be another important and beneficial effect of a diet rich in fruit and vegetables containing these vitamins i.e. alpha-tocopherol ascorbic acid and beta-carotene [9, 14, 15]. Furthermore, effective antioxidant action has been shown to be dependent on the concentrations and different combinations of these vitamins present [2].
