In recent 10 years, vinegar has been widely used in
food industry (Tesfaye et al., 2002; Bartowsky & Henschke,
2008; Zheng et al., 2010). Therefore, the global
demand for vinegar is increased significantly (http://
www.versatilevinegar.org). Producing high-acidity
vinegar (acidity ≥90 g L
1) is one of the solutions to
meet the market demand. In addition, it can reduce the
production cost. Recently, many vinegar manufacturers
are producing high-acidity vinegars.
