Anthocyanin content was analysed using pH differential method
as described by Sadasivam and Manikam (1995) and results were
expressed as mg of cynidine-3-glucoside equivalent per 100 g on
fresh weight basis by using the formula: TAC = (DA M
W DF 1000)/e, where TAC was total anthocyanin content (mg
cyanidine-3-glucoside/100 g), DA = (A512 nm pH1.0–A700 nm
pH1.0) (A512 nm pH4.5–A700 nm pH4.5), MW= molecular
weight of cyanidine-3-glucoside (449.2 g/L), DF = dilution factor
and e represent molar absorbance coefficient (26,900 L1 M1 cm1)
(Giusti & Wrolstad, 2000).
