Previous works reported that the extent of lethal or sub-lethal
effects induced by PL mainly depends on the actual energy dose
absorbed by microorganisms, which, in turn, is affected by several
factors such as concentration and sensitivity of microbial cells to
light pulses as well as color, opacity and rugosity of food surface
and optical properties of coating material (Pataro et al., 2011). The
concomitant effect of all these factors could be responsible for the
limited inactivation effect of PL, when applied alone or in
combination with bioactive coating, detected in the present work
