3.2.4. Fibrinolytic activity
There was no detectable fibrinolytic activity in unfermented red
beans. After fermentation, nattokinase activity
(28.21 ± 0.56 FU g1) was detected and a fibrin plate assay also
showed an obvious clear zone (21.97 mm), indicating that fibrin
was hydrolyzed by the water extract of fermented red beans (data
not shown).
