At higher magnifications (Fig.1P) areas are visible where the alginate is partially connected to the protein matrix. As in the case of kappacarrageenan,alginate produced blue whiting gels with high hardness and adhesiveness values, although the values of all the other characteristics analysed were lower than in the control (Table 1). As regards alterations in colour, the gel
presented greater redness ap and yellowness bp (Table 1) the same as was found with CMC.
