2.4. pH measurement
Using the IKA homogenizer (ULTRA-TURRAX, Germany), 5 g of
raw burger was homogenized for 30 s with 45 mL of distilled water. A
pH meter (JENWAY, USA) was used to measure the pH values of the
samples.
