The composition of hydrolysed amino acids is shown
in Table 1. An abundance of hydrolysed amino acids
was produced, but few physiological amino acids were in
the purified protein-bound polysaccharide. Its protein
portion predominantly consisted of aspartic acid, glutamic
acid, serine, glycine, and alanine. The molar ratios
of aspartic acid and glutamic acids having acidic side
chains were 9.0% and 11.1%, respectively. The proteinbound
polysaccharide was entirely negatively charged
and purified in DEAE-cellulose column by these two
acidic amino acids. The other side, histidine, arginine,
and lysine having positive charges were 1.2%, 2.8%, and
4.2%, respectively. Alanine and glycine were 12.7%
and 12.0%, respectively. The bulky side chains of alanine
and glycine were considered important in promoting
hydrophobic interactions with biomolecules (12.7% and
12.0%, respectively).
