3. Results and discussion
3.1. Identification of isolated strains
Nine hundred LAB strains were isolated from kimchi samples.
The isolates with useful enzyme activities such as b-Gal and a-Gal
were selected first and then their bile salts resistances were
examined. The isolates were spotted onto MRS agar plates containing
X-Gal or X-a-Gal and incubated for 24 h at 30 C. Total nine
isolates showed both b-Gal and a-Gal activities and they were
spotted on the MRS agar plates containing 0.1% glycodeoxycholic
acid sodium salt and incubated for 24 h at 30 C. Four isolates (C4,
C10, C182 and F27) grew well and they were finally selected for
further experiments. They were identified by API 50CHL kit and 16S
rRNA gene sequencing results (Table 1). The carbohydrate utilization
pattern of C4, C10, and F27 was identical with that of Leu.
