(L*), redness (a*), and yellowness (bn) were measured.
Based on an and bn values, the h value (hue angle: theratio
bn/an) andthe Cn value [chroma: were calculated as indicators of the intensity of color (Clydesdale,
1998). The means of 5 meas urements made on the skin
surface of the right breast and leg of each chicken were
recorded for each color indicator. Four samples from each
treatment were used and mean values were recorded for
each color indicator.
