In the case of peaches, some authors (Iglesias & Echeverría, 2009), consider that the red color is a key fruit attribute, since it contributes to the attractiveness of these fruits. Other authors disagree with this appreciation, stating that a redder color in the flesh would be less appealing to consumers than a yellow one, because of its association with flesh bleeding, one of the symptoms of chilling injury (Lurie & Crisosto, 2005). From this point of view, it can be concluded that HPP would have a positive effect on the consumer preference.
