One of the most obvious aspects of curing is that vanillin b-d-glucoside and related b-d-glucosides come into contact with b-d-glucosidases, with the result that free vanillin and related substances (notably 4-hydroxybenzaldehyde) are released (Kanisawa et al., 1994;
