Introduction
Sweet is the cuisine that is found in almost all the
countries of the world, though the style of
production as well as the taste varies from
country to country. In Asian countries sweet
dishes are very special. Indian sweets are
different from other confectionery products and
do not have similarities with the bakery products
manufactured in other parts of the world. Sweet
making sectors represent a part of the most
popular works of the unorganized sector in the
various states of India and other Asian countries
and manufacture delicious sweet dishes and
deserts. Every ethnic group has many kinds of
traditional sweets made of different ingredients
and those are specific to various occasions and
festivals as well. A large number of workers are
engaged in those unorganized sectors in India as
well as in different Asian countries [1].
