The results of bitterness evaluation during time (Fig. 4a) exhibited
a slightly different ranking of formulated carrier systems used for
encapsulation of caffeine, than the ones observed for the release
profile of caffeine (caffeine content) and encapsulation efficiency.
Bitterness intensity evaluated sensorily increased steadily during
the observed release time (Fig. 4b), while the release profile of caffeine
revealed that the majority of caffeine is released after the first
10–15 min (except for the chitosan coated particles) (Fig. 1b).
