Model fitting was satisfactory both for spinach and green beans
where the exponential shape curve was in accordance with experimental data (Fig. 2). In order to validate the model, correlation
coefficients were maximized, both for spinach and green
beans. The correlation coefficients considering folate diffusion
were between 0.87 and 0.99 for spinach and between 0.77 and
0.99 for green beans. For sugars and acids, the correlation coefficients
varied from 0.82 to 0.99 for spinach and from 0.93 to 0.99
for green beans.
