Kefir grain composition
Kefir grains were washed with sterile water and dried between
tissue paper. Water content of the grains was determined
by drying at 100 8C to constant weight. Polysaccharide
content was determined by the phenol-sulfuric acid method
(Dubois and others 1956) using glucose as the standard. Protein
content was determined by a Kjeldahl method
