Sweet and savory miso marinated salmon is a delicious alternative to traditionally seasoned Japanese fish which might either be simply salted or cooked with teriyaki sauce.
The preparation for this miso marinated salmon is two-fold. First, the miso marinade is made using white miso paste (or shiro miso in Japanese), sugar, mirin (sweet sake), and sake (Japanese alcohol). The ingredients are cooked until the alcohol is evaporated and the sugar has dissolved. The marinade is then cooled to room temperature.
