The results of the sensory analysis indicate that there were no dierences in colour, texture and sweet-
ness intensity between the cultivars and among the dierent pre-treatments data not reported). Flavour
intensity was judged to be signi®cantly lower in the
pre-air dehydrated fruits AD and DIS+AD) both for
Rony and Mirado cultivars Table 3). As for overall
acceptance, the not pre-treated and the DIS melon
spheres obtained the highest scores, indicating the
crucial importance of ¯avour and con®rming the neg-
ative eect of air-dehydration on this important ac-
ceptancefactorTable3).FruitsofcultivarRonywere
signi®cantly more acceptable than those of cultivar
Mirado, mainly for the higher ¯avour intensity. The
frozen storage did not modify ¯avour and overall
acceptance.
