The stock concentration of the antimicrobial solution was used
for stage 2. Roast beef was inoculated with two levels of Listeria
(Day 0) and refrigerated for 30 days. Three samples from each inoculation
level were removed every 5 days, treated with MilliQ water
(NoAMS control) for 20 min, and plated for Listeria enumeration (black
bars in Fig. 2). Three additional samples were then taken and treated
with HAMS (gray bars in Fig. 2). All treated samples were plated immediately
after the 20min contact time. The “*” in Fig. 2 indicates that there
was a significant difference (P b 0.05) between the NoAMS treated samples
and the HAMS treated samples.
