Moisture-sorption isotherms are needed to predict the final moisture content of the spray-dried powders during the spraydrying process. Combinations of temperature and moisture content in the final powders determine the glass transition
temperature of the product and the stickiness temperature that should be avoided during spray drying in order to reduce
the product loss. Based on the knowledge obtained from the sorption isotherms, there may be some potential for spray drying
the orange juice in its pure form.
