coordinates were obtained: L*(lightness), a*(redness) and b*(yellowness),
and a* and b* were used to compute the hue angle. Before
measurement, the spectrophotometer was calibrated against the
white tile supplied with the instrument. Measurements were taken
after 1 day of storage on six Amaretti cookies; readings were performed
on six different points of each sample.
