EACs based on pullulan, chitosan, and pectin (in order of efficacy) retarded the metabolic process and delayed increases in TSS,whereas control fruits presented more pronounced maturation because they lacked protection against the external atmosphere. Moreover, the significantly higher TSS of control samples could also be due to the concentration of solids in the fruits caused by water loss (Mali and Grossmann 2003; Perdones and others 2012) or by the solubilization of cell wall polyuronides and hemicelluloses in the mature strawberry (Benhabiles and others 2013).
