Heating the MWP suspensions led to a slight increase of negative
charge on the particles, from −16 mV to −18 mV, for both nonhomogenized
and homogenized systems (0 mM calcium chloride)
(Table 1). It is possible that heating exposed more anionic groups on
the particle surface due to thermally induced protein conformational
changes. Heating could also have caused protein destabilization
and led to more exposure of anionic groups or shielding of cationic
groups.
