Heat a grill pan over medium high heat. Coat pan with cooking spray.
Add chicken to pan. Cook on each side until done.
- Place the broth and 1 tbsp of olive oil in saucepan. Bring to boil.
Add couscous. Cover and set aside for 10 mins.
Fluff couscous with a fork. When it completely cold, stir in baby spinach, red onion, raisin, and pine nut
Combine lemon juice, balsamic vinaigrette, olive oil, parsley in small bowl. Add to couscous salad. Stir well.
