ARISA was carried out with the universal bacterial primer described by Fisher and Triplett (1999). DNA (~20e50 ng) extracted from the cheese and pure culture was amplified in a PCR reaction containing 1x iProof HF buffer, 400 mMof each primer, 200 mMeach dNTP, 0.01 U iProof High Fidelity DNA Polymerase (Biorad, Hercules, CA, USA) in a final volume of 20 ml.
