① Enzymes from shrimp
1. The solid waste has always been regarded commercially due to its content of chitin and
carotenoproteins
2. Thawing water from Northern shrimp contained hyaluronidase, β-N-acetyl-glucosaminidase,
chitinase, alkaline phosphatase, and several nucleases
3. A simple method for pilot-scale recovery of these enzymes
