The model fitted adequately the data at P ≤ 0.05. A comparison
between experimental and predicted values for fat percentage of the
separated fluid had an average relative error of 7%. The model was
used to generate the surface plot (fitted response) for the %F of the reduced
fat minced meats (Fig. 2). The highest values of %F were observed
in the right side of the experimental area,where P3was tested,while %F
decreased toward the left side of surface where P2.5 I2 was assayed
