The volume increase of the pasta after cooking was determined
following the method of Bayram, Oner, and Eren (2004), by placing
5 g of pasta in measuring cylinder which contained 25 mL of oil.
The amount of oil that was displaced by the uncooked pasta gave
the initial volume (Vi). The amount of oil displaced by the cooked
pasta (immersion in boiling water for 12 min) gave the final volume
(Vf). Volume increase of pasta after cookingwas calculated using this
equation: Volume increase of cooked pasta (folds) = Vf/Vi.
