Dried bananas, or so-called "banana figs" are peeled firm-ripe bananas split lengthwise, sulphured and
oven-dried to a moisture content of 18 to 20%. Wrapped individually in plastic and then packed by the dozen in
polyethylene bags and encased in cartons, they can be stored for a year at room temperature between 24° to 30°C
and they are commonly exported. The product can be eaten as a snack [4].
