Although the fiber content of Job’s tear
flour and cake flour were not statistically
different, Job’s tear flour tended to have
slightly higher than that of cake flour. This
might be benefit to the consumers. This fiber
content (0.85%) was higher than those of
Dechkunchon and Thongngam (2007) and
Thassanee (1987), which were 0.67 and 0.23%,
respectively.
