2.12. Statistical analysis
For the selection of LAB as inoculum to goat cheese, all tests
included in this study were analysed via Principal Component
Analysis (PCA) using the software XLSTAT 7.5.2 (Addinsoft, New
York, NY, USA).
A randomised complete design was used for measuring the inhibition
