LRS3 increased
the number of bifidobacteria, achieved a brief lag phase, enhanced
the bacterial tolerance under the gastrointestinal condition, and
obtained a higher production of butyric acid. The prebiotic effect
of LRS3 was affected by the structure (Zhang, Wang, Zheng, Lu, &
Zhuang, 2013). However, information about the structural characteristics
and physicochemical properties of lotus seed resistant
starch prepared by different methods is not reported.
