By comparison, the tissue of raw berries was composed of
regular, oval-shaped cells that were distributed uniformly along the
cross-section and had undamaged cell walls (Fig. 1c). Consequently,
a weakened and thinned surface layer did not protect the inner part
of the fruits against severe damage during freezing/thawing.
