The surimi gel samples were equilibrated to 25 C for 2 h prior to
the aw measurement. Water activity was measured at 25 C
(0.2 C) using an electronic dew-point water activity meter
(Aqualab Series 4 model TE, Decagon Devices, Pullman,WA). The aw
meter was equipped with a temperature control to maintain
a constant temperature and was calibrated with saturated salt
solutions. The measurements were performed in triplicate and
mean values standard deviation are reported.
