influenced the physical properties of spray-dried powders.
While the former decisively determined particle size and surface
oil, the latter significantly affected absolute and bulk densities
and moisture content. Yet, total oil was not affected by either parameter.
With respect to stability, this study added factual evidence
to strengthen the hypothesis that shelf life depends primarily
on the porosity of dried particles to oxygen and confirmed
previous reports that surface oil is not a significant determinant
of shelf life.
