Tarragon Vinaigrette with Shallots
1 teaspoon Dijon mustard
1 tablespoon Tarragon vinegar
3 tablespoon sunflower oil
1 shallot chopped salt and pepper
Place the mustard and vinegar in a bowl, season with salt and stir briskly with a folk or small whisk. Gradually add the oil, whisking constantly until thoroughly combined. Add the chopped shallot and season with pepper. Use immediately to dress a potato salad, for example.
