The drying data were used to describe microwave drying kinetics of parsley (Petroselinum crispum Mill.) leaves.
The parameters k and n of semi-empirical Page’s equation [Eqn (1)] for a given drying condition were estimated using non-linear regression technique (Table 1) and the fitness is illustrated in Fig. 3. The model gave an excellent fit for all the experimental data points with values for the coefficient of determination of greater than 0
