Now look back to the relative amounts of anthocyanin found from the UV-Vis results in experiment 1. How does your ranking of relative concentration of anthocyanin for each berry compare to the ranking of relative antioxidant efficiency? Are there discrepancies? If so, brainstorm with your group other sources of antioxidant activity that could be present in each berry extract. (In fact, the antioxidant efficiency of the extracts does not correlate strongly with the anthocyanin content of the extracts. The raspberry extract, in particular, is a stronger antioxidant than would be expected based on its anthocyanin content. The goal is for students to recognize that the antioxidant results are different than predicted by the anthocyanin content.
