Glucose yield from T1–T4 was also proportionately higher
(pb0.001) than T5 and T6 (Table 2). The true glucose content in the
starch hydrolysate was more important than the reducing sugar
content, as only the glucose was isomerized by Sweetzyme (glucose
isomerase) to fructose. In the case of sweet potato also, highest
percentage conversion to glucose and reducing sugars was obtained
for T1–T4, (range: 96.96–98.52%) while the conversionwas less for T5
and T6 (89.71% and 90.47% respectively; Table 3).
