Appearance quality, firmness, and shelf life are important from the point of view of consumer’s choice. Consumers judge the quality of fresh fruits on the basis of appearance and firmness
at the time of initial purchase (Kader, 1999). Shelf life and fruit qualities fully depend on maturity stages. If strawberries are harvested before optimum maturity its shelf life is extended
but nutritive value and quality become reduced. On the other hand, fully matured fruits of strawberry possess high nutritive value with limited shelf life. So, it is necessary to balance
between maturity stage and nutrient content of fruits.
