Methods to improve iron bioavailability in rice
The most widely recognized strategies to reduce
micronutrient malnutrition are supplementation with
pharmaceutical preparations, food fortification, dietary
diversification and disease reduction. However, for
various reasons, none has successfully and widely
reduced the prevalence of iron-deficiency anemia in
developing countries where rice is the staple food, or
could solve the problem of iron malnutrition. At
present, research to improve the iron bioavailability in
rice is mainly focused on phytase and cysteine.
