Mangosteen fruits (Garcinia mangostana), originating from
Malaysia, were obtained from a local food store in Antigonish,
Nova Scotia, Canada. All fruits were cleaned and inspected to remove
those that were damaged, diseased or pest-infested. Following
this, the fruits were separated into three parts: the exocarp
(referred to here as peel), mesocarp (referred to here as rind),
and edible pulp (referred to here as edible aril). Subsequently, fruit
portions were lyophilised and then stored in polyethylene bags at
18 C until analysed. Before analysis, lyophilised fruit portions
were crushed in a food processor.
