Add mint leaves to water in a pot and bring it to a boil. Turn off the flame once the water starts boiling and add the Moroccan Mint tea. Mix in the honey.
Steep this mixture for 2 minutes and strain into a freezer friendly metal tin.
Freeze for 4-5 hours till frozen, stirring every hour. Once ready to serve, use a fork to scrape granita into tiny crystals. Serve with a few mint sprigs.
