For annealing, 100 g starch was mixed with 300 ml water
containing 0.5 g/100 g Potassium meta-bisulfite which acted
as antimicrobial reagent. The starch slurry was incubated
at 45, 50 and 55 1C for 8, 16 and 24 h in water bath. For
HMT, the moisture of rice starch was adjusted to 15, 20
and 25 g/100 g and equilibrated at 4 1C for four days.
Samples were then placed in sealed glass tubes and
autoclaved at 100, 105 and 110 1C for 0.5, 1.0 and 1.5 h.
The treated samples were subsequently dried until the
moisture content of the samples reached about 10 g/100 g.
Dry samples were ground and screened through a 100-
mesh sieve prior to analysis.
