Cassava starch was isolated from cassava tubers (Wind Mill brand, Heuschen & Schrouff Oriental Foods Trading distributor, Holland) with 10.76 % moisture content (wb), protein 0.13%, fat 0.25%, ash 0.17 %, carbohydrate 88.69% and 27.10% amylase (db). Sunflower oil (Ozana brand, Austria) was used for deep frying the cassava crackers.
