All the date syrup
sampleswere initially
free of aerobes,moulds,
coliforms and enterobacteriaceae.
These products were microbio logically
stable five months storage
at room temperature.
These results could be
related to physico-chemical
proprieties of these
products i.e. high acidity,
high amount of sugar,
richness in poly phenolic compounds
and low aw (Table 6).
